Scrambled egg, mashed advocado and baked beans

Set yourself up for the day with this nutritious, filling and tasty breakfast. Would also work well as a quick lunch.

Serves 1

Ingredients

half advocado
2 small slices of wholegrain bread (about 30g each)
2 eggs
1 tbs milk
baked beans (1/4 of a tin)
1tsp oil

Method

Crack 2 eggs into a bowl, add 1tbs milk and beat together.  Heat the oil in a pan over a low heat  and add the egg mixture. Lightly stir with a wooden spoon.

Mash the avocado then toast the  bread and spread the mashed advocado onto the toast.

Warm the baked beans in a pan, and serve with the scrambled eggs and avocado toast.
